A Study on the in vitro Digestibility of Hydroxypropyl Starches by Pancreatin

A study was made of the digestibility of hydroxypropyl starches by a relatively large amount of pancreatin. The digestibility was estimated from the reduction of an alkaline ferricyanide solution by the digests.
