Occurrence and prevention of oxidative deterioration in dairy products

1 The mechanism of chemical, enzymatic, and microbial fat spoilage in dairy products is outlined. Dry butterfat, dried whole milk, and cold storage butter show autoxidati ve deterioration. As this type of deterioration can generally be prevented by so-called antioxidants, some of these chemicals are treated more in detail.
2 The Central Institute for Nutrition R esearch T.N.O. (Utrecht, Netherlands) studied the esters of gallic acid, and especially ethyl-, octyl-, and lauryl gallates. In levels of 0.01 % added to dry fat these compounds essentially improve the keeping quality. The antioxidant properties of the gallates in dry fats are inversely proportional to their molecular weights.
3 When used in dried whole milk the higher esters of gallic acid may be more efficient than the lower ones.
4 Some esters of gallic acid show a striking fungistatic action as judged in the mycelium inhibition test using Fusarium avenaceum.
5 As far as investigated, gallates are non-toxic.
6 The influence of some gallates and of nordihydroguaiaretic acid on the organoleptic properties of some products is described.
