The survival of enterobacteriaceae in acid liquid foods stored at different temperatures

1. Pathogenic Enterobacteriaceae do not survive for more than one day in lemon juice. However, in fruit juices of pH ≥ 3 the more resistant types of these organisms are still viable in considerable numbers after a sojourn for up to 35 days when stored under refrigeration, and up to 10 days at ambient temperature. In tomato juice most Enterobacteriaceae may even grow at room temperature, although with the pathogenic serotypes this always leads to autosterilization - though with some strains only after 30 days.
2. Fruit juices of pH ≥ 3 must, therefore, be considered as potential sources of pathogenic Enterobacteriaceae.
3. In these products, E. coli, Kb. aerogenes and Kb. cloacae appeared reliable indicator organisms for the pathogenic serotypes of Enterobacteriaceae. However, the isolate of E. freundii used in this investigation showed too little resistance at the lower pH levels to be of any value for this purpose.
