An assessment model for regulatory acceptance of food-chain co-products and processes for their production is presented. The large quantities of these products produced in the European Union (EU) are known to contain significant amounts of valuable components that remain unexploited in current processes and represent a substantial negative cost for the food industry. For many food processors to have a sustainable future, these co-products will need to be exploited instead of being wasted.
