The effect of high bread consumption in a Western European diet on the blood cholesterol - A study was made of the effect of increased consumption of cereals (bread) on the cholesterol level of the blood in a Western-type diet rich in saturated fatty acids. The investigation was carried out with 21 adult volunteers (male and female), care being taken that the calorie value and the fatty acid composition of their menu remained the same. Doubling the bread ration had no effect on the blood cholesterol after seven weeks. The average cholesterol values for men and women differed in level, but showed parallel slight variations during the period of observation. Similar fluctuations were seen in a con trol group of men whose diet was not changed. These changes in the cholesterol level co-incided with abrupt climatic changes during the transition period from severe winter to spdng. During the bread experiment the body weight of both men and women fell by an average of 0.75 kg. The fluctuations in the cholesterol level could not be related to the changes in body weight. The haemoglobin content fell by an average of 0.5 g./100 ml. blood in men and women; it had returned to the original level three weeks after discontinuation of the bread experiment.
