Food Metabolomics: Fact or Fiction?

Comprehensive analysis of both volatile and non-volatile metabolites in food combined with information on sensory properties and multivariate statistics can be a valuable tool in understanding and improving the taste of food. Performing food metabolomics studies is, however, challenging and requires the analytical measurements to be of a very high quality. Although in some cases more targeted approaches are adequate, it is expected that new developments in analytical chemistry will increase the value of food metabolomics in the future. © 2011 Advanstar Communications, Inc.
